Ladders are more reliable but you take more losses because the tower blocks arrows. However, you take more losses if the tower burns (bit rare and requires player focus). I always go with ladders. A faster siege is usually a better one. You gotta deploy them in bulk though, one unit of ladders is a bit weak since they don't stream in together.
Medi 2 is my favorite total War mainly because of the plethora of amazing mods for the game. I would recommend playing a campaign or two in vanillia to get your feet wet then jumping in.
